Beef & Bean Enchiladas..Very easy!
Posted by ivy | Under Food & Drinks.. Friday Feb 3, 2006Well first off.. Today is my mum’s birthday. Some say ignore it.. Some say call her and say happy birthday… Hmm.. do I want tob e like her? no not really.. She is mid 40s now.. (thats how we will refer to it..LOL)
I made these last night.. t hey were pretty good! and pretty easy to make..
Beef & Bean Enchiladas..
1 1/2 lbs LEAN Ground beef
1 med. onion, chopped
1 can refried beans
1 can Ranch style beans (i used chili beans b/c its all I had..)
1/8 tsp. garlic salt
1 pkg taco seasoning
1 c. ripe olives, quartered (optional.. we didnt use them because the kids don’t like them)
1 can enchilada sauce
12 corn tortillas
2 c. shredded cheddar cheese
1. Cook ground meat and onion together until meat is browned all the way through and crumbly. Drain and rinse..Return to frying pan.
2. Add taco seasoning, garlic salt, and both cans of beans mix together and cook on low until warmed all the way through.
3. Soften tortillas.. I found the best way to do this was in the microwave. Put tortillas on a plate cover with a wet papertowel They will soften up enough for you to roll them..(I do not recommend frying them in oil… thats just more oil that you do not need..Microwave works just as good..
)
4. Prepare a 3 qt shallow baking dish or large baking pan by pouring half the enchilada sauce into the bottom of the pan..
5. Spoon about 1/3 cup of meat mixture into tortillas. Roll, and place seam side down in baking dish.
6. Cover with remaining half of enchilada sauce and top with cheese.
7. Bake on 350 for 15 minutes or until cheese is melted and bubbly
Top with olives if you like.. Or with sour cream, salsa.. whatever you wish..
